From Bog to Bottle: Making Your Own Canned Cranberry Juice!

  • Sugar (optional, adjust to taste) or Honey if you prefer a more natural sweetener
  • Water
  • Large pot
  • Canning jars and lids
  • Canning funnel
  • Jar lifter
  • Water bath canner
  • Canning tongs
  • Labels and pen

Prepare the Cranberries:

  • Fresh: Rinse the cranberries thoroughly picking out any bad or rotten ones. 
  • Frozen: Thaw the cranberries slightly before proceeding.

Make the Juice:

  • Combine cranberries and water in a large pot.
  • Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the cranberries have burst and the juice is released.
  • If desired, add sugar to taste. Stir well to dissolve.

Prepare the Jars:

  • Wash jars and lids in hot soapy water.
  • Sterilize the jars and lids in boiling water for 5 minutes.

Fill the Jars:

  • Using a canning funnel, carefully ladle the hot cranberry juice into the sterilized jars, leaving about 1/4 inch headspace.

Process in a Water Bath Canner:

  • Place the filled jars in a water bath canner, ensuring the water level is at least 1 inch above the jar tops.
  • Bring the water to a rolling boil and process according to your altitude's processing time (consult a reliable canning guide for specific instructions).

Cool and Store:

  • Carefully remove the jars from the canner using a jar lifter and place them on a rack to cool completely.
  • Once cool, check for proper seals.
  • Label and store the sealed jars in a cool, dark place for up to a year.
